Lemon Cheesecake

* 250gms plain biscuits biscuits (round wine, vanilla wine, arrowroot etc)
* 100 - 125gm butter
* a tin of condensed milk (or Make your own - 1c milk powder, 1c sugar, 2T Butter, 1/2c hotwater - blended together)
* 125g Yoghurt Cheese (just strain greek yoghurt overnight) or Cream Cheese
* 3 teaspoons Gelatine dissolved in 2T Hot water
* Juice of 1 lemon

Get biscuits and crush them to a powder (place them in a bag or cloth and hit repeatedly with a rolling pin or use your stick blender). Add melted butter and press it together with the crumbs to make a dough for the cheesecake base. Press the dough into the bottom of a greased Dish.

Mix together condensed milk with Yoghurt cheese. Whisk for two minutes, then mix in the Gelatine and Lemon Juice. Whisk for another 20 seconds and then pour in to the pie dish. Now just leave your cheesecake in the refrigerator to set.
To serve you can put a syrup over - I use Passion Fruit Pulp but grated chocolate looks good. You can use anything really.
