There are many a kiwi who love a good lemon recipe, and where we live there seem to be lovely lemons all year round.
Lemon Yoghurt Cake
1 3/4 cups caster sugar
1 cup of oil eg sunflower, whatever
Rind of 2 lemons
2 eggs
1/2 tsp salt
1 cup natural yoghurt (I reckon de winkel works best)
3tsp lemon juice
2 cups self raising flour
Method
Beat together in a bowl the oil, rind, eggs and sugar.
Then add the other ingredients. Mix.
Bake in oven for 45-50 min on 180c
Leave for at least 10 min before you take it out of the tin.
So there you go, it's a really easy one I reckon and VERY delicious. Always gets compliments.
