Here's my favourite Classic Kiwi Recipe. It cuts into nice easy-hand-held slices Like all good picnic pies should. And - more importantly , tastes terrific!
HAM , KUMARA & APRICOT PICNIC PIE
2 cups diced cooked ham
2 cups cooked, diced kumara
½ cup dried apricots
1 red onion, chopped
1 egg
1 teaspoon lemon pepper seasoning
100 g. feta cheese, diced
1 pack (400 g). crusty pie pastry
1 egg, beaten
1.) Combine all ingredients – except pastry and beaten egg – in a food processor. Process until evenly chopped and blended.
2.) Preheat oven to 180 C. Line a baking sheet with baking paper.
3.) Roll pastry out into a large circle. Heap pie filling in centre of pastry and bring up the sides of pastry to enclose filling – leaving a small opening on top of pie.
4.) Arrange pie on lined baking sheet and brush with beaten egg to glaze. Bake in pre-heated oven for 40 minutes, or until pastry is crisply golden brown. If necessary- cover the pie part way through cooking to prevent burning
Serve pie warm, or cold with salads.
